Remember when I said I was going to blog more about my life?? And when I said I was going to cook more consistently?? Well, Michael and I have decided to share what we ate every so often on the blog. Here’s the thing, though : we aren’t master chefs. We rely heavily on fun recipes and tweak them to our liking more often than not. So … first up : coconut curry + veggies.
I’m a ( serious ) fan of any rice / veggie combo, but curry sauce really spices it up a bit, in a good way. Chop up all your favorite vegetables, add some red pepper flakes + garlic, and simmer in your favorite curry sauce. We added a little coconut creamer to ours to lighten up the consistency. When warm + ready, serve it over a nice full bowl of rice. ALSO, my secret ingredient to almost anything is Krazy Janes. It’s a mixed up salt mixture that seriously rocks.
